Tamale Hash
Chunked tamales pan-fried with onions until crusty, served with eggs and red or green chile sauce.

- 4 tbsp butter
- 3 tbsp vegetable oil
- 1 whole medium onion, chopped
- 8 whole tamales, any variety, cut into bite-size chunks
- 4 whole eggs
- 1 cup red or green chile sauce, warmed
- 2 whole tomatoes, chopped
- 4 whole scallions, chopped
- 0.5 cup crema or sour cream
- 0.5 cup Cheddar cheese, grated

In a heavy skillet, warm butter and oil over medium heat. Add onion and sauté until very soft.

Add tamale pieces and stir in gently. Cover the skillet for 2 to 3 minutes to let the mixture steam and heat through, developing a little crust on some pieces.

Keep mixture warm while preparing eggs sunny-side up or scrambled.

Spoon tamale mixture onto plates. Arrange an egg over each and add a generous amount of chile sauce. Top with tomato, scallions, crema, and cheese. Serve immediately. Serves 4.
