Taffy Apple Salad

  • 1 tbsp all-purpose flour
  • 0.5 cup white sugar
  • 1 large egg yolk
  • 2 tbsp apple cider vinegar
  • 8 oz canned crushed pineapple, drained (reserve juice)
  • 4 large apples, diced with skin on
  • 2 cup unsalted peanuts
  • 8 oz frozen whipped topping, thawed

Instructions

    In a medium saucepan, combine flour, sugar, egg yolk, vinegar, and reserved pineapple juice.

    Cook over medium heat, stirring constantly, until thick.

    Remove from heat and chill completely.

    In a large bowl, combine crushed pineapple, diced apples, and peanuts.

    Add the chilled cooked mixture and fold in the whipped topping.

    Chill for at least 1 hour before serving.
