Taco Salad

  • 1 0.5 lb ground beef
  • 0.5 head iceberg lettuce, shredded
  • 2 tomatoes, cut into wedges
  • 8 oz canned corn, drained
  • 8 oz canned garbanzo beans, drained
  • 0.5 cup radish slices
  • 6 0.5 oz tortilla or corn chips
  • 1 avocado, peeled and sliced
  • 4 oz cheddar cheese, shredded
  • 0.3 cup French dressing
  • 0.3 cup onion, chopped
  • 0.5 tsp dried oregano

Instructions

    Brown ground beef and drain off fat. Add French dressing, onion, salt, pepper, and oregano. Simmer 5 minutes.

    Combine lettuce, tomatoes, corn, beans, and radishes. Toss with enough dressing to moisten.

    For each serving, place tortilla chips on plate. Top with meat mixture.

    Add lettuce mixture, avocado slices, shredded cheese, olives, and sour cream as desired.
