Taco Pasta Casserole

- 1 lb ground beef
- 1 0.3 oz taco seasoning packet
- 1 tbsp butter
- 1 large onion, chopped
- 1 small jalapeño, seeded and finely chopped
- 12 oz shell pasta
- 29 oz canned stewed tomatoes (2 cans)
- 11 oz chunky salsa
- 2 cup shredded Cheddar cheese, divided

Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.

Brown ground beef in a large skillet over medium heat; drain fat. Add taco seasoning; stir and set aside.

Melt butter in the same skillet. Sauté onion and jalapeño until tender. Stir onion mixture into seasoned beef.

Cook pasta according to package directions; drain.

In a large bowl, combine beef mixture, cooked pasta, stewed tomatoes, salsa, and 1 cup Cheddar. Mix well.

Spoon into prepared baking dish. Top with remaining 1 cup Cheddar.

Bake 25–30 minutes until heated through and cheese is melted.
