T.J. Cinnamon's Cinnamon Rolls
Copycat T.J. Cinnamon's gourmet cinnamon rolls — soft, enriched dough filled with a double-sugar cinnamon-brown sugar mixture and drizzled with a sweet vanilla icing.
Ingredients
- 2 pkgs active dry yeast
- 0.5 cup warm water (105–115°F)
- 0.3 cup sugar (for dough)
- 4 0.5 cup all-purpose flour, divided
- 1 tsp salt
- 1 cup milk, scalded and cooled to 110°F
- 0.3 cup vegetable oil
- 2 count eggs, room temperature
- 0.5 cup butter or margarine, softened (for filling)
- 1 cup brown sugar (for filling)
- 0.5 cup granulated sugar (for filling)
- 2 tbsp ground cinnamon (for filling)
- 1 cup confectioners' sugar (for icing)
- 3 tbsp warm milk (for icing)
- 1 tsp vanilla extract (for icing)

Dissolve yeast in warm water with 1/2 tsp sugar. Let stand 5 minutes until foamy.

In a mixing bowl, combine 3 cups flour, 1/3 cup sugar, and salt. At low speed, beat in scalded milk, oil, eggs, and yeast mixture. Beat in remaining flour (about 1½ cups) until dough pulls from the sides.

Knead on a floured surface 5 minutes. Cover and let rise 1 hour until doubled.

Roll dough into a large rectangle. Spread softened butter over surface. Mix brown sugar, granulated sugar, and cinnamon; sprinkle evenly over butter.

Roll dough up tightly from the long side. Cut into 1-inch slices. Place in greased pans, cut side up. Let rise 30–45 minutes.

Bake at 350°F (175°C) for 20–25 minutes until golden. Mix confectioners' sugar, warm milk, and vanilla for icing. Drizzle over warm rolls.
