T.G.I. Friday's Jack Daniels Grill Glaze

Copycat TGI Friday's Jack Daniel's grill glaze — roasted garlic simmered with pineapple juice, teriyaki, dark brown sugar, lemon juice, and Jack Daniel's into a thick, sweet-smoky BBQ glaze.

  • 1 head garlic
  • 1 tbsp olive oil
  • 0.7 cup water
  • 1 cup pineapple juice
  • 0.3 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 0.3 cup dark brown sugar
  • 3 tbsp lemon juice
  • 3 tbsp minced white onion
  • 1 tbsp Jack Daniel's whiskey
  • 1 tbsp crushed pineapple
  • 0.3 tsp cayenne pepper

    Cut ½ inch off the top of the garlic head. Remove papery skin but keep cloves together. Place in a small baking dish, drizzle with olive oil, and cover. Roast at 325°F (165°C) for 1 hour. Cool.

    Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a medium saucepan over medium-high heat. Stir occasionally until mixture boils, then reduce to a simmer.

    Squeeze roasted garlic from the head into the saucepan. Whisk to combine.

    Add lemon juice, minced onion, Jack Daniel's, crushed pineapple, and cayenne pepper. Stir to mix.

    Simmer 40–50 minutes until the sauce has reduced by about half and is thick and syrupy. Let cool before using as a glaze on grilled meats, chicken, or salmon.
