Szechuan Pasta Salad
Crowd-pleasing Szechuan-style pasta salad with turkey, angel hair, snow peas, water chestnuts, and baby corn in a soy-sesame-spicy dressing.

- 2 package angel hair pasta
- 0.5 lb turkey, diced
- 2 whole red bell peppers, diced
- 2 medium carrots, peeled and diced
- 1 can water chestnuts, drained and sliced
- 6 whole green onions, chopped
- 1 cup miniature corn on the cob, sliced
- 0.3 lb snow peas, sliced diagonally
- 4 tbsp sesame seeds, toasted
- 2 cup mayonnaise
- 0.8 cup soy sauce
- 2 tbsp Szechwan hot oil
- 0.3 cup sesame oil
- 1 tbsp Dijon mustard

Cook angel hair pasta al dente; drain and cool.

Dice turkey, bell pepper, and peeled carrots. Drain and slice water chestnuts. Chop green onions.

Slice corn cobs and snow peas diagonally. Stem cilantro leaves.

Toast sesame seeds in a dry skillet until golden.

Make dressing: blend mayonnaise, soy sauce, Szechwan hot oil, sesame oil, and Dijon mustard with garlic.

Combine pasta with all vegetables and turkey. Pour dressing over; toss to coat. Garnish with toasted sesame seeds and cilantro.
