Swiss Parmesan Potato Casserole

Thinly sliced potatoes layered with Parmesan, butter, and cream, finished with melted Swiss cheese.

  • 1 0.3 cup Parmesan cheese, grated
  • 0.5 tsp salt
  • 1/8 tsp pepper
  • 6 whole potatoes, peeled and thinly sliced
  • 6 tbsp butter
  • 0.5 cup heavy cream
  • 0.5 cup Swiss cheese, grated
  • 2 tbsp fresh chives, chopped

Instructions

    Preheat oven to 400°F. Mix together Parmesan cheese, salt, and pepper.

    Layer thinly sliced potatoes in a buttered 2-quart casserole dish, sprinkling each layer with the Parmesan mixture and dotting with butter.

    Cover tightly with foil and bake for 1 hour.

    Uncover and pour cream over the top. Sprinkle with Swiss cheese and bake uncovered for 5 minutes until cheese melts. Sprinkle with chives before serving. Serves 6.
