Sweet Tomato Relish

  • 1 gallon tomatoes, chopped
  • 8 each whole onions, chopped
  • 4 stalks celery, chopped
  • 4 each whole bell pepper, chopped
  • 4 each jalapeño peppers, seeded and minced
  • 3 cup white vinegar
  • 3 cup granulated sugar
  • 3 tbsp salt
  • 0.8 tsp allspice
  • 0.8 tsp cloves
  • 0.3 tsp ginger
  • 1 tbsp black pepper

Instructions

    Combine all ingredients in a heavy pot and cook at least one hour.

    Taste and adjust seasonings.

    Wash pint jars in dishwasher - keep hot.

    Boil caps and rings.

  5. 5

    Fill hot jars and seal, turning upside down until cool.

    Yield: 8 pints
