Sweet Sausage Frittata
Ingredients
- 0.3 cup onion, finely chopped
- 8 oz sweet Italian sausage, casings removed
- 1 small zucchini, thinly sliced
- 1 cup fresh mushrooms, sliced
- 4 large eggs large eggs
- 0.5 cup milk
- 0.5 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp dried basil
- 1/8 tsp dried oregano
- 0.3 cup grated Parmesan cheese

In a 9-inch oven-safe skillet, place the chopped onion and sausage. Cook over medium heat, stirring to break the sausage into small pieces, until it begins to lose its pink color. Drain off excess fat.

Add the zucchini and mushrooms to the skillet. Cook, stirring occasionally, until the zucchini is tender, about 5 minutes.

In a medium bowl, beat together the eggs, milk, salt, pepper, basil, and oregano until combined.

Pour the egg mixture over the sausage and vegetables in the skillet. Cook over low heat, lifting the edges with a spatula to allow the uncooked egg to run underneath.

When the eggs are nearly set, sprinkle the Parmesan cheese evenly over the top.

Place under the broiler for 2–3 minutes until the top is lightly golden and the cheese is melted.

Slide out of the pan onto a serving plate, cut into 4 wedges, and serve hot.
