Sweet Salmon with Ginger and Scallions

- 4 fillets salmon fillets (1 inch thick)
- 4 stalks scallions, cut into 2-inch strips
- 0.3 cup fresh ginger, cut into 1/4-inch chunks
- 1 0.5 tbsp olive oil
- 0.3 cup white wine, rice wine, or sweet sake
- 0.5 cup water
- 1 tbsp soy sauce
- 1 tsp granulated sugar
- 1 pinch salt and pepper
- 0.5 tsp sesame oil, optional

Heat olive oil in a pan over high heat. Season both sides of salmon fillets with salt and pepper.

Place fillets in pan skin-side down and do not disturb. Cook on high for 40 seconds, then reduce heat to medium-high and cook 3 more minutes.

Turn fillets over and cook for another 2 minutes. Remove from pan and set aside on a plate.

Increase heat to high. Add ginger and scallions to the pan. Cook until slightly tender, about 1 minute.

Add wine and deglaze the pan. Add soy sauce, water, and sugar. Bring to a boil, then reduce heat to a simmer.

Return salmon fillets carefully to the pan and simmer until cooked through, about 2 minutes. Drizzle with a few drops of sesame oil if desired. Serve immediately.
