Sweet and Sour Chicken (Crockpot)

Classic sweet and sour chicken slow-cooked with pineapple, ginger, brown sugar, and red wine vinegar — serve over hot rice.

  • 1 whole carrot, cut in pieces
  • 1 whole green pepper, cut in pieces
  • 1 whole onion, quartered
  • 2 tbsp quick-cooking tapioca
  • 4 piece chicken breasts, cut up
  • 8 oz pineapple chunks in juice, undrained
  • 0.3 cup dark brown sugar, firmly packed
  • 0.3 cup red wine vinegar
  • 1 tbsp soy sauce
  • 2 tbsp fresh ginger root, minced

Instructions

    Put vegetables (carrot, green pepper, onion) in bottom of crockpot. Sprinkle tapioca over vegetables.

    Place chicken on top of vegetables.

    Combine undrained pineapple, brown sugar, red wine vinegar, soy sauce, bouillon, garlic powder, ginger, and cilantro; pour over chicken.

    Cover and cook on LOW 6–8 hours.

    Serve over hot cooked rice, garnished with fresh cilantro.
