Sugarcane Baked Ham With Spiced Apples And Pears

- 3 lb hickory smoked spiral-sliced ham
- 0.3 cup firmly packed light brown sugar
- 0.3 cup pure cane syrup or molasses
- 2 tbsp dark corn syrup
- 1 pinch freshly grated nutmeg
- 0.3 tsp ground cloves
- 0.3 tsp ground cinnamon
- 0.5 tsp dry mustard
- 1 tbsp water
- 2 Granny Smith apples, washed, cored, and halved
- 2 Bartlett pears, washed, cored, and halved

Preheat the oven to 350°F (175°C). Line a shallow roasting pan with parchment. Place the ham on a wire rack in the pan.

In a bowl, combine the brown sugar, cane syrup, dark corn syrup, nutmeg, cloves, and cinnamon. In a separate small bowl, dissolve the mustard in the water; stir into the spice mixture.

Brush the entire ham with the glaze. Place the apple and pear halves around the ham. Baste the fruit with the remaining glaze.

Bake for 45 minutes. Baste the ham and fruit again. Bake for another 45 minutes until the ham is deeply glazed and caramelized.

Remove from the oven and rest for 5 minutes. Arrange the fruit on a platter with the sliced ham. Serve warm or at room temperature with buttermilk biscuits on the side.
