Stuffed Peppers

  • 4 each bell peppers (red, yellow, or green) (4 or 5 for 1.00)
  • 1 each onion (.25)
  • 3 cup cooked rice (pennies)
  • 1 each can of tomatoes (.49)
  • 1 can of black beans (.25)
  • 0.5 cup of grated cheddar cheese (.25--.99 for 2 cups)

Instructions

    Preheat oven to 350 F.

    In large bowl mix cooked rice, diced onion, beans, and tomatoes.

    Salt and pepper to taste.

  4. 4

    Cut off tops of peppers and clean out the insides.

  5. 5

    Stuff with mixture.

  6. 6

    Sprinkle grated cheese on top.

    Pour 1/2 cup of water in a shallow casserole dish and place stuffed peppers in this.

    Cook for 30 minutes or until peppers are tender.

  9. 9

    This is a great main dish.
