Stuffed Avocado

Avocado stuffed with shredded chicken, deep-fried golden in cracker crumbs, then topped with green chile sauce and melted cheese.

  • 1 whole avocado
  • 0.3 cup shredded cooked chicken
  • 0.5 cup buttermilk
  • 0.3 cup flour
  • 0.5 cup saltine cracker crumbs
  • 4 cup oil for frying
  • 0.5 cup green chile sauce
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup shredded Jack cheese

Instructions

    Heat oven to 350°F. Slice avocado, remove pit and skin. Fill the hollow with shredded chicken. Press halves back together.

    Set up three shallow dishes: buttermilk, flour, and cracker crumbs.

    Carefully dip avocado in buttermilk, roll in flour, dip in buttermilk again, and roll in cracker crumbs until completely covered.

    Heat oil in a deep saucepan over medium-high heat. Deep-fry the avocado until golden brown, about 2 minutes. Drain on paper towels.

    Place avocado in a shallow casserole, press slightly to flatten. Cover with green chile sauce and both cheeses. Bake until cheese melts, about 10 minutes. Serve with rice and beans.
