- 4 cup chicken stock or beef stock
- 2 eggs
- 4 tsp finely grated Parmesan cheese
- 0.3 tsp freshly grated nutmeg
- 1 tbsp all-purpose flour
- 1 0.5 tsp kosher salt
- 1 lb fresh spinach or Swiss chard, stemmed and cut into narrow strips (optional)
- 0.5 tsp freshly ground black pepper

In a small bowl, stir together eggs, Parmesan, a pinch of salt, nutmeg, and flour until just combined. Do not beat to frothy.

In a medium saucepan, bring stock to a boil. Season with remaining salt.

Place a colander with widely-spaced holes over the boiling stock. Pour the egg mixture through the colander into the soup, letting it fall freely to form strings.

Remove colander and stir the soup once or twice. If using greens, reduce heat to low and stir them in just to heat through.

Remove from heat. Season with pepper. Serve immediately.
