- 2 medium potatoes, cut into small pieces
- 3 medium carrots, peeled and cut into small pieces
- 0.3 cup olive oil
- 1 small rutabaga, peeled and cut into small pieces
- 2 medium parsnips, peeled and cut into small pieces

Preheat the griddle to high heat. In a large bowl, toss vegetables with olive oil. Transfer vegetables onto the hot griddle top and stir fry until vegetables are tender. Servings and enjoy.
