  • 2 count live lobsters (1½ lbs each), split in half and claws cracked
  • 3 tbsp vegetable oil
  • 2 tbsp minced fresh ginger
  • 2 tbsp minced garlic
  • 2 tbsp black bean sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice wine or dry sherry
  • 0.5 cup chicken stock
  • 4 count green onions, cut into 2-inch pieces
  • 1 tbsp cornstarch, dissolved in 2 tbsp water

Instructions

    Heat a wok over high heat until smoking. Add oil and swirl to coat. Add lobster pieces shell-side down; cook 2 to 3 minutes until shells turn red.

    Flip lobster; add ginger and garlic. Stir-fry 1 minute.

    Add black bean sauce, soy sauce, sesame oil, and rice wine. Stir-fry 30 seconds.

    Pour in chicken stock; cover and cook 3 to 4 minutes until lobster is just cooked through.

    Add green onions. Drizzle in cornstarch slurry and toss to coat everything in a light glossy sauce. Serve immediately with steamed rice.
