Steamed Red Snapper
Whole Chinese-style steamed red snapper with ginger, scallions, soy sauce, and sesame oil.

- 3 lb whole red snapper, cleaned with head on
- 1 0.5 tsp salt
- 2 inches fresh ginger root, thinly sliced
- 4 whole scallions, cut in 1-inch lengths
- 1 tbsp soy sauce
- 1 tsp sesame seed oil
- 3 tbsp rice wine or dry sherry

Cut deep gashes into the sides of the fish, about 3/4 inch apart. Rub salt all over the fish, inside cavity and on outside skin.

Slice ginger thinly. Cut scallions into 1-inch lengths. Put half the scallions and ginger into the cavity; spread the rest on top.

Sprinkle soy sauce and sesame oil carefully over the fish. Place plate in steamer tray over 1-2 inches of boiling water.

Sprinkle rice wine over fish. Bring water to boil, cover and steam for 20-25 minutes. Serve immediately.
