Grilled Steak Salad with Herb Vinaigrette

  • 1 lb beef tenderloin or sirloin
  • 4 oz mixed field greens
  • 8 spears asparagus, trimmed and cooked
  • 0.5 cup Greek olives
  • 1 cup cherry tomatoes
  • 0.7 cup extra-virgin olive oil
  • 1 tsp minced garlic
  • 1 tbsp Italian herb spice blend
  • 0.5 cup fresh lemon juice
  • 1 tsp lemon zest

Instructions

    Combine olive oil, garlic, minced onion, Italian herbs, lemon juice, lemon zest, salt, and pepper in a jar. Shake well.

    Season beef with salt and pepper. Grill until medium-rare, about 17 minutes total, turning once.

    Slice beef on the diagonal into thin pieces.

    Arrange mixed greens on plates. Top with asparagus, olives, and cherry tomatoes.
