Steak & Ale's Hawaiian Chicken

Copycat Steak & Ale chicken breasts marinated overnight in pineapple juice, soy, sherry, and vinegar, then grilled and topped with melted cheese.

  • 6 whole chicken breasts
  • 0.3 cup soy sauce
  • 5/8 cup dry sherry
  • 1 0.5 cup unsweetened pineapple juice
  • 0.3 cup red wine vinegar
  • 3/8 cup sugar
  • 0.5 tsp garlic powder
  • 6 slice Muenster or provolone cheese

Instructions

    Combine soy sauce, sherry, pineapple juice, red wine vinegar, sugar, and garlic powder to make marinade.

    Place chicken in marinade and marinate overnight in refrigerator.

    Remove chicken from marinade. Grill, sauté, or bake. Baste with marinade ONLY during the first several minutes of cooking.

    Place a slice of Muenster or provolone on each breast and broil just until cheese starts to melt. Serve immediately.
