Squash Casserole

Summer squash cooked with onion dip mix and topped with American cheese and crushed potato chips.

  • 6 whole medium summer squash (yellow or white)
  • 1 package Frito-Lay Toasted Onion Dip Mix
  • 1 0.5 cup boiling water
  • 0.5 tsp salt
  • 0.3 tsp pepper
  • 3 tbsp bacon drippings
  • 0.5 cup American cheese, grated
  • 0.5 cup Ruffles potato chips, lightly crushed

Instructions

    Cut squash into medium slices. Place in boiling water with the Frito-Lay Roasted Onion Dip Mix and salt. Cook until tender.

    Drain and add pepper and bacon drippings. Pour into a baking dish.

    Top with American cheese and crushed Ruffles potato chips.

    Bake at 350°F for 20 minutes. Makes 6 to 8 servings.
