Squash and Orange Soup

  • 2 lb squash of your choice, peeled, seeded and finely diced
  • 1 medium onion or handful of shallots, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 5/8 cup fresh orange juice (about 5 fl oz)
  • 1 tsp freshly ground black pepper
  • 0.5 cup plain yogurt for garnish

Instructions

    Peel and finely dice the squash, discarding all seeds. Finely chop the onion or shallots.

    Put squash and onion in a large pan with just enough water to cover. Add finely chopped parsley.

    Bring to a boil, then simmer for 15 to 20 minutes until squash and onion are very soft.

    Turn off heat and allow to cool slightly.

    Put contents through a blender until an even, smooth consistency is achieved.

    Return to pan and add fresh orange juice and ground black pepper. Reheat but do not boil.

    Serve marbled with plain yogurt.
