Split Pea Soup

  • 1 lb dried split peas
  • 8 cup water
  • 1 lb smoked ham
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 tsp salt
  • 0.3 tsp black pepper

Instructions

    Heat water and peas to boiling. Boil 2 minutes, remove from heat and cover. Let sit for 1 hour.

    Add whole ham, onion, salt, and pepper. Cover and simmer until peas are tender, about 1 hour.

    Remove ham and trim meat from bone. Cut ham into 1/2-inch pieces.

    Stir ham, carrots, and celery into soup. Cover and simmer until vegetables are tender, about 45 minutes.

    Adjust seasoning and serve. Freezes well.
