Spinach and Potato Casserole

  • 2 cup mashed potatoes
  • 0.5 cup sour cream
  • 0.3 tsp cayenne pepper
  • 1 medium onion, chopped
  • 2 tbsp butter
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 0.3 cup diced green chiles
  • 0.5 tsp salt
  • 0.3 tsp black pepper
  • 1 cup shredded Colby or Cheddar cheese

Instructions

    Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.

    Sauté onion in butter over medium heat until softened, about 5 minutes.

    In a large bowl, combine mashed potatoes, sour cream, cayenne, sautéed onion, spinach, green chiles, salt, and pepper. Mix well.

    Spread mixture into prepared baking dish.

    Sprinkle Colby cheese evenly over the top.

    Bake 20 minutes until heated through and cheese is melted and lightly golden.
