Spinach Pancakes

- 4 eggs
- 1 cup coconut milk
- 0.3 cup chia seeds
- 1 cup spinach, chopped
- 0.5 tsp black pepper
- 0.5 tsp ground nutmeg
- 1 tsp baking soda
- 0.5 cup coconut flour
- 0.5 tsp salt

In a bowl, whisk eggs with coconut milk until frothy. Mix together all dry ingredients and add in the egg mixture and whisk until smooth. Add spinach and stir well. Preheat the griddle to medium-low heat.

Spray griddle top with cooking spray. Pour 3-4 tablespoons of batter onto the hot griddle top and make a round pancake. Cook pancake until lightly golden brown from both sides. Servings and enjoy.
