Spinach Lasagna Casserole

Layered lasagna noodles with spinach and two cheeses baked in a rich cream of mushroom sauce.

  • 4 cans (13.5 oz each) chopped spinach, drained well
  • 2 cans (10.75 oz each) cream of mushroom soup
  • 12 oz lasagna noodles
  • 1 lb Provolone cheese, sliced
  • 8 oz mozzarella cheese, shredded
  • 1 tsp salt, to taste
  • 0.5 tsp pepper, to taste
  • 2 tbsp olive oil

Instructions

    Preheat oven to 375°F. Coat an 8×12-inch casserole dish with a light coating of olive oil.

    Layer lasagna noodles, drained spinach, cream of mushroom soup, Provolone cheese, and mozzarella cheese.

    Repeat layering until casserole is filled.

    Bake for 45 minutes until bubbly and cooked through.
