Spinach Artichoke Casserole
Creamy spinach and artichoke casserole with sautéed mushrooms and onions, topped with Parmesan.

- 1 whole onion, chopped
- 0.3 cup butter (1/2 stick)
- 8 oz fresh mushrooms, sliced
- 2 package frozen spinach, thawed
- 8 oz sour cream
- 14 oz canned artichoke hearts, quartered
- 0.5 cup Parmesan cheese, grated
Instructions

Sauté onion in butter until softened. Add mushrooms and sauté until wilted.

Squeeze the water out of thawed spinach.

Mix spinach, onion and mushroom mixture, sour cream, and artichoke hearts in a casserole dish.

Top with Parmesan cheese and bake at 350°F for 30 to 60 minutes until warmed through and cheese is melted.
