Spicy Stuffed Flounder
Flounder fillets stuffed with imitation crab and Stove Top stuffing, topped with a cheddar wine cream sauce.

- 1 lb frozen or fresh flounder fillets
- 0.3 cup minced onion
- 4 tbsp margarine
- 10 oz imitation crab meat, cut into small pieces
- 0.5 cup Stove Top One Step Stuffing Mix, preseasoned
- 2 tbsp parsley
- 1 tsp salt, to taste
- 0.5 tsp pepper, to taste
- 3 tbsp margarine (for sauce)
- 3 tbsp flour
- 1 0.3 cup milk
- 0.3 cup dry white wine
- 1 cup shredded Cheddar cheese
- 0.5 tsp paprika

Thaw fish if frozen. Check each piece for small bones. Cook onion in margarine until tender. Add crab meat, stuffing, parsley, salt, and pepper; stir and remove from heat.

Spoon stuffing over fillets; wrap ends under to create a roll. Place seam-side down in a rectangular baking dish.

Make sauce: melt margarine, stir in flour and salt. Add milk and wine; cook over medium-high heat, stirring, until thick.

Pour sauce over fillets. Bake uncovered at 400°F for 20-30 minutes, until fish flakes. Sprinkle with cheddar and paprika; bake a few more minutes until cheese melts.
