Spicy Sausage Soup

- 1 lb spicy pork sausage
- 1 can (14.5 oz) Mexican-style stewed tomatoes, broken up
- 1 can (13.75 oz) beef broth
- 0.5 cup salsa
- 1 tsp dried oregano
- 1 cup frozen whole-kernel corn, thawed
- 1 tbsp fresh cilantro, chopped
Instructions

Combine tomatoes, beef broth, salsa, and oregano in a 3-quart pot over medium-high heat. Bring to a boil.

Pinch sausage into 1-inch pieces. In a separate skillet, cook sausage over medium heat until cooked through, about 10 minutes; drain fat.

Add corn to the tomato mixture and stir to combine.

Add drained sausage to the soup and stir well.

Continue cooking over medium heat until soup is heated through, about 5 minutes.
