Spicy Baked Ratatouille

- 2 tsp ground coriander
- 1 tsp ground cumin
- 2 garlic cloves, finely chopped
- 1 bay leaf, crushed
- 4 eggplants, unpeeled and sliced
- 4 zucchini, unpeeled and sliced
- 3 large onions, sliced
- 3 large bell peppers, seeded and sliced
- 3 tomatoes, sliced or coarsely chopped
- 3 tbsp olive oil
- 3 tbsp fresh parsley, chopped

Mix coriander, cumin, garlic, crushed bay leaf, salt, and pepper in a small bowl.

Layer eggplant in the bottom of a lightly oiled 14×11×2-inch baking dish. Sprinkle with some seasoning, oil, and parsley.

Add layers of zucchini, onions, bell peppers, and tomatoes in that order, sprinkling each layer with seasoning, oil, and parsley.

Cover and bake at 400°F for 30 minutes. Uncover and bake 30 more minutes until vegetables are fork-tender.
