Special Macaroni Salad

  • 16 oz macaroni
  • 0.5 cup mayonnaise
  • 1 cup cucumber, peeled, seeded and chopped
  • 1 tbsp dried minced onion
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tsp salt and pepper to taste

Instructions

    Cook pasta in a large pot of salted boiling water until al dente. Rinse under cold water and drain.

    In a large bowl, combine the pasta and mayonnaise; mix well.

    Stir in cucumber, dried onion, ham, and cheddar cheese. Mix well.

    Drizzle olive oil and white wine vinegar over top and toss.

    Season with salt and pepper. Refrigerate for at least 4 hours before serving.
