Spanish Pork Stew with Potatoes

- 1 lb pork shoulder, cut into large chunks
- 1 lb tomatoes, coarsely chopped
- 1 whole bell pepper, seeded and sliced
- 2 tbsp vinegar
- 3 clove garlic, crushed
- 4 whole medium potatoes, peeled and cut into thick chunks
- 1 cup stock
- 1 whole bay leaf
- 1 whole onion, chopped

Brown pork in a little oil in a skillet, if desired.

Layer onion, tomatoes, garlic, and potatoes in the bottom of the crockpot.

Add pork chunks on top.

Pour in stock and vinegar. Add bay leaf. Season with salt and pepper.

Cook on low for about 10 hours, or until meat is tender.

Add bell pepper strips during the last 30 minutes of cooking.

Remove bay leaf and adjust seasoning before serving.
