- 4 lb chicken, cut into pieces
- 3 cup self-rising flour
- 1 cup cornstarch
- 3 tbsp seasoned salt
- 2 tbsp paprika
- 1 tsp baking soda
- 3 tbsp sugar
- 3 cup corn flakes, crushed
- 2 eggs, well beaten
- 0.3 cup cold water
- 2 cup corn oil (for frying)

Combine flour, cornstarch, seasoned salt, paprika, baking soda, and sugar in a large bowl.

Place crushed corn flakes in a second bowl. Beat eggs with cold water in a third bowl.

Pour oil to 1-inch depth in a heavy skillet. Heat to 375°F (190°C). Preheat oven to 350°F (175°C). Grease a 9×12-inch baking pan.

Coat each chicken piece: first in flour mixture, then egg wash, then corn flakes, then briefly back into flour mixture.

Fry skin-side down 3–4 minutes per side over medium-high heat until golden. Do not crowd.

Transfer to prepared baking pan, skin-side up. Cover tightly with foil, leaving one side loose for steam.

Bake 35–40 minutes. Uncover last 10 minutes for crispy skin.
