- 2 0.5 lb chicken breast, cooked and cut into pieces
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cup chicken stock
- 2 tsp curry powder
- 3 tbsp paprika
- 0.5 tsp dried sweet basil
- 1/8 tsp salt
- 0.3 tsp black pepper
- 0.5 cup all-purpose flour
- 2 tbsp vegetable oil
- 2 cup cooked rice, for serving

Preheat oven to 350°F.

Pan-fry chicken pieces in vegetable oil until golden brown, then set aside.

In the same pan, sauté bell peppers, celery and onion until just tender.

Make roux: In a separate skillet, stir flour in 2 tablespoons of oil over medium heat until golden brown.

Warm chicken stock to boiling. Whisk in the roux until smooth.

Combine chicken, sautéed vegetables, chicken stock mixture and all seasonings; mix well.

Pour into a baking dish and bake at 350°F for 15 to 20 minutes. Serve over cooked rice.
