South of the Border Casserole

Layered Mexican-style casserole with refried beans, salsa ground beef, corn and olive vegetable layer and a double cheese topping. Serve with lettuce, sour cream and chips.

  • 16 oz canned refried beans
  • 1 lb ground beef or turkey
  • 1 jar favorite salsa
  • 1 cup frozen corn
  • 0.3 cup chopped green onions
  • 1 can sliced black olives
  • 2 cup shredded cheese

Instructions

  1. 1

    Brown meat; remove from heat and stir in salsa.

    Mix onions, corn and olives together.

    In a large casserole layer: all the beans, half the meat/salsa mixture, all the vegetables, remaining meat.

    Top with cheese. Bake covered at 350°F for 45 minutes.

    Serve with chopped lettuce, tomatoes, sour cream and tortilla chips.
