- 2 tbsp olive oil 1 can (28 oz.) plum tomatoes, chopped,
- 2 cup chopped onions with their juices
- 2 cup diced carrots 1 T brown sugar
- 1 tbsp minced garlic 1/2 c dried barley
- 1 0.5 tsp ground cumin 1/2 c chopped parsley
- 1 cup dried lentils Salt and pepper to taste
- 4 cup chicken broth
- 1. Heat oil in large, heavy pot over medium high heat. Add onions and carrots; cook, stirring
- 2. Add the lentils, chicken broth, tomatoes, and brown sugar. Bring mixture to a boil, reduce
- 45 minutes, stirring occasionally.
- 3. Stir in the parsley and season to taste with salt and pepper.
