  • 2 tbsp olive oil 1 can (28 oz.) plum tomatoes, chopped,
  • 2 cup chopped onions with their juices
  • 2 cup diced carrots 1 T brown sugar
  • 1 tbsp minced garlic 1/2 c dried barley
  • 1 0.5 tsp ground cumin 1/2 c chopped parsley
  • 1 cup dried lentils Salt and pepper to taste
  • 4 cup chicken broth
  • 1. Heat oil in large, heavy pot over medium high heat. Add onions and carrots; cook, stirring
  • 2. Add the lentils, chicken broth, tomatoes, and brown sugar. Bring mixture to a boil, reduce
  • 45 minutes, stirring occasionally.
  • 3. Stir in the parsley and season to taste with salt and pepper.
