Sonora Chicken Casserole
Layers of chicken-flavored stuffing, sweet corn, and seasoned chicken topped with a salsa-sour cream sauce and Monterey Jack cheese. A fast and satisfying Southwestern bake.

- 6 oz Stove Top chicken flavor stuffing mix
- 1 cup hot water
- 0.3 cup butter
- 12 oz salsa, divided
- 7 oz whole kernel corn, drained
- 3 cup cooked and cubed chicken breast
- 2 tbsp sour cream
- 1 cup shredded Monterey Jack cheese

Preheat oven to 325°F.

Combine stuffing seasoning packet, water, and butter in a 9-inch square pan. Add stuffing crumbs and ½ cup salsa; stir just enough to moisten. Spread evenly in pan.

Layer corn, then chicken over stuffing.

Mix remaining salsa with sour cream. Spoon over chicken.

Sprinkle with cheese. Bake for 30 minutes or until heated through. Serve with additional sour cream if desired.
