Smothered Chicken with Provolone

  • 4 whole boneless, skinless chicken breasts
  • 1 tsp dried basil
  • 1 tbsp garlic powder
  • 3 tbsp hickory smoke flavoring
  • 0.3 cup white cooking wine
  • 0.3 cup vegetable oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp white vinegar
  • 1 cup onion, sliced
  • 1 cup mushrooms, sliced
  • 1 tsp additional hickory smoke flavor
  • 3 tbsp unsalted butter
  • 8 slice provolone cheese
  • 4 slice cooked bacon

Instructions

    Make the marinade: whisk together the basil, garlic powder, hickory smoke flavoring, white wine, vegetable oil, salt, black pepper, and white vinegar.

    Marinate the chicken in the covered mixture for at least 2 hours in the refrigerator.

    While chicken marinates, slice the onions and mushrooms. Cook the bacon in a skillet until crispy. Sauté the mushrooms and onions in butter with a teaspoon of hickory smoke flavor for 3 to 5 minutes until tender. Set aside.

    Remove the chicken from the marinade and grill for about 10 minutes, or until just cooked through. Do not overcook.

    Preheat the oven broiler. Transfer cooked chicken to a shallow baking dish. Top each breast with the sautéed mushrooms and onions, a slice of bacon, and 2 slices of provolone.

    Broil for 2 to 3 minutes until the cheese is melted and bubbly. Serve immediately.
