Smoked Sausage Marinade

  • dried red beans
  • 1 cup orange juice
  • smoked sausage, cut into1 1/2in pieces

  • 8 oz ham shanks 1/2 jar jalapenos, minced
  • onions, chopped
  • 1/
  • 4 cup juice from jalapenos
  • 2 clove garlic, minced 4 cloves garlic, minced

  • 1 tsp grated orange rind
  • black pepper
  • 2 tsp oregano
  • red pepper
  • 1 tsp cumin
  • 0.5 tsp sage 2 tbs red wine vinegar

Instructions

    Place beans in Dutch oven and cover with water. Combine orange and lime juice in small pot and boil

    Let soak 30 minutes. Add remaining ingredients to until reduced to 1/2 cup. Add remaining ingredients

    beans except salt and rice. Bring to boil over and blend very well. Let cool and spread on beef

    medium high heat. Reduce heat to medium low, (preferably steaks). Place in double gallon zip-lock

    cover and simmer 2 1/2 hours. Add water if and let set for 1 hour. Grill on coals.
