Smoked Salmon, Crispy Bacon And Maytag Blue Cheese Salad

- 1 large egg
- 6 oz Maytag Blue cheese, divided
- 1 tsp Dijon mustard
- 1 tsp chopped garlic
- 0.5 tsp salt, to taste
- 0.3 tsp freshly ground black pepper
- 1 0.5 cup olive oil
- 0.5 cup buttermilk
- 1 dash Worcestershire sauce
- 1 dash Tabasco sauce
- 6 cup assorted baby greens
- 1 lb smoked salmon, flaked
- 6 oz crispy cooked bacon, crumbled
- 2 hard-boiled eggs, sliced

In a food processor, combine the egg, 4 oz blue cheese, Dijon mustard, and garlic. Purée until smooth. Season with salt and pepper.

With the machine running, slowly add the olive oil until fully incorporated and thick. Add the buttermilk, Worcestershire, and Tabasco; season with salt and pepper.

In a large bowl, toss the greens with as much dressing as desired. Season with salt and pepper.

Mound the dressed greens in the center of 4 plates. Crumble the smoked salmon over each salad.

Top each salad with the crispy bacon, sliced hard-boiled eggs, and remaining crumbled blue cheese.
