Smoked Oyster Deviled Eggs

Classic deviled eggs elevated with smoky oysters, chives, and Dijon mustard for an elegant appetizer.

  • 3 0.8 oz can smoked oysters
  • 9 whole hard-cooked eggs
  • 6 tbsp mayonnaise or salad dressing
  • 2 tbsp snipped chives, plus more for garnish
  • 1 tbsp Dijon-style mustard
  • 0.3 tsp freshly ground pepper

Instructions

    Drain oysters; pat with paper towels to remove as much oil as possible. Coarsely chop.

    Halve hard-cooked eggs lengthwise. Remove yolks and set whites aside.

    Place egg yolks in a bowl; mash with a fork. Add mayonnaise, chives, mustard, pepper, and chopped oysters. Mix well.

    Pipe or spoon egg yolk mixture into egg white halves.

    Garnish with snipped chives.
