- 6 habaneros
- 6 serranos
- 1 ripe mango (or 1 heaping cup pineapple)
- 4 garlic cloves
- 0.5 cup white vinegar
- 0.5 cup cider vinegar (240 ml total)
- 1 tsp kosher salt
- 1 0.5 tsp brown sugar
- 1 tsp smoked paprika (optional) or lightly char peppers on a grill
- 1 Pinch allspice (optional)
Instructions

Char or dry-toast peppers and garlic until fragrant.

Simmer all ingredients 8–10 minutes.

Blend ultra-smooth; balance salt, sweet, and acid, then bottle.

Stir 2–3 tbsp into ketchup for a killer fry sauce.

Swap mango for peaches when in season.
