  • 6 habaneros
  • 6 serranos
  • 1 ripe mango (or 1 heaping cup pineapple)
  • 4 garlic cloves
  • 0.5 cup white vinegar
  • 0.5 cup cider vinegar (240 ml total)
  • 1 tsp kosher salt
  • 1 0.5 tsp brown sugar
  • 1 tsp smoked paprika (optional) or lightly char peppers on a grill
  • 1 Pinch allspice (optional)

    Char or dry-toast peppers and garlic until fragrant.

    Simmer all ingredients 8–10 minutes.

    Blend ultra-smooth; balance salt, sweet, and acid, then bottle.

    Stir 2–3 tbsp into ketchup for a killer fry sauce.

    Swap mango for peaches when in season.
