Smoked Duck, Sweet Corn, And Mushroom Pasta

Rich angel-hair pasta tossed with smoked duck, sweet corn, exotic mushrooms, and a truffle-scented heavy cream sauce.

  • 2 tbsp duck fat
  • 1 cup minced onions
  • 2 count ears sweet corn
  • 4 cup assorted exotic mushrooms
  • 1 lb smoked duck, julienned
  • 1 tbsp chopped garlic
  • 2 cup heavy cream
  • 1 lb fresh angel-hair pasta
  • 0.5 cup grated Parmigiano-Reggiano cheese
  • 1 drizzle white truffle oil
  • 2 tbsp chopped chives

Instructions

    Bring a large pot of salted water to a boil. In a large sauté pan, heat duck fat. Add onions and sauté 2 to 3 minutes; season.

    Cut corn kernels from the cob. Add corn to onions and cook 2 minutes. Add mushrooms; sauté 2 to 3 minutes. Season.

    Add smoked duck and garlic; sauté 2 minutes. Stir in cream and bring to a simmer. Cook sauce until slightly thickened, about 3 minutes.

    Cook angel-hair pasta in boiling water 2 to 3 minutes until al dente. Drain well.

    Toss pasta with the duck-cream sauce. Fold in cheese and drizzle with truffle oil. Serve in bowls garnished with chives.
