Smoked Corn On The Cob

  • 2 clove garlic, minced
  • 2 onions, diced

    Brinkman or similar smoker 6c squash, diced

    Charcoal pan 1/2 full 3 cans whole corn

    Water pan 3/4 full 1 red pepper, diced

  4. 4

    8 ears fresh corn in the husk 1 green pepper, diced

  5. 5

    margarine 1 tsp salt

  6. 6

    salt 1/4 cups olive oil

  7. 7

    2 tsp cumin

  8. 8

    Carefully peel back husks and remove silk. Brush

  9. 9

    corn with melted margarine and lightly salt. Fold Heat olive oil in large skillet and sauté onion, garlic,

    husks back in place and tie with string. Put on peppers, cumin, and 1/2 tsp cayenne until onions

    smoker grill and cook 1-1 1/2 hours or until tender. are soft. Stir beans together in Dutch oven. Add

    onion mixture and stir well. Cook at medium heat.

    minutes. Add corn and cook another 10 minutes.

    Add salt and mix together well. Serve over warm
