Slumgullion

A hearty American cowboy-style casserole of ground beef, Mexi-Corn, canned tomatoes, green chiles, and rice baked together and topped with melted Cheddar cheese.

  • 1 lb ground beef
  • 1 can Mexi-Corn (8 oz)
  • 1 lb canned tomatoes
  • 1 can diced green chiles (4 oz)
  • 1 cup raw rice
  • 1 dash Tabasco sauce
  • 1 cup Colby or Cheddar cheese, shredded

Instructions

    Brown beef in a skillet; drain fat.

    Add Mexi-Corn, tomatoes, green chiles, rice, and Tabasco. Stir to combine.

    Place in a casserole dish. Bake for 1 hour at 350°F.

    Remove casserole from oven and top with cheese.

    Return to oven to melt cheese, about 5 to 10 minutes.
