Slow Roasted Pork Butt

  • 5 lb bone-in pork shoulder (Boston butt), untrimmed
  • 1 0.5 tsp salt
  • 1 tsp black pepper

Instructions

    Preheat the oven to 400°F.

    Season all sides of the pork shoulder generously with salt and pepper.

  3. 3

    Place the pork fat-side up on a rack in a roasting pan. Roast at 400°F for 30 minutes to develop a crust.

    Reduce the oven temperature to 250°F and continue cooking for 6½ hours.

    Remove from the oven and allow to cool completely.

    Remove the meat from the pan and, using two forks, pull and shred all of the meat into tender strands. Yields about 3 pounds of pulled pork.

    Serve the pulled pork on sandwiches, with coleslaw, or as a filling for tacos and wraps.
