Slow Cooker Vegetarian Gumbo

  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 cup okra, sliced (fresh or frozen)
  • 1 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 3 clove garlic, minced
  • 2 cup vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 tsp Cajun seasoning
  • 0.5 tsp dried thyme
  • 1 bay bay leaf
  • 2 cup cooked white rice, to serve

Instructions

    Combine tomatoes, okra, onion, bell pepper, celery, garlic, vegetable broth, kidney beans, Cajun seasoning, thyme, and bay leaf in slow cooker.

    Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

    Remove bay leaf. Taste and adjust seasoning.

    Serve over cooked white rice.
