Slow Cooker Greek Beef Stifado

- 1 tbsp vegetable oil
- 2 lb beef stew meat, cut into 1-inch cubes
- 3 whole large onions, peeled and diced
- 4 clove garlic, minced
- 0.5 tsp ground cinnamon
- 0.5 tsp ground allspice
- 3 tbsp red wine vinegar
- 1 0.5 cup tomato sauce
- 1 tsp white sugar
- 1 whole bay leaf
- 1 cup crumbled feta cheese

Heat the oil in a large skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.

Reduce heat to medium and add the diced onions to the skillet. Cook until soft. Add the garlic, cinnamon, and allspice and cook for 1 minute.

Add the red wine vinegar, tomato sauce, sugar, and bay leaf. Stir well to combine. Pour the mixture over the beef in the slow cooker.

Cover and cook on Low for 8 to 10 hours, or on High for 4 to 5 hours, until the beef is very tender.

Remove the bay leaf. Stir in the crumbled feta cheese just before serving. Serve over orzo, rice, or crusty bread.
