Slow Cooker Osso Buco

- 4 lamb or veal shanks
- 0.5 cup all-purpose flour, seasoned with salt and pepper
- 1 clove garlic, minced
- 3 tbsp olive oil
- 1 cup beef broth
- 0.3 cup dry white wine
- 2 tbsp tomato paste
- 1 lemon, zest only, cut into strips
- 3 small carrots, finely diced
- 0.3 tsp dried marjoram
- 0.3 tsp dried oregano
- 1/8 tsp dried sage
- 1 tbsp fresh parsley, chopped

Roll shanks in seasoned flour. Brown with garlic in hot olive oil in a skillet on all sides.

Add beef broth, white wine, tomato paste, lemon zest, carrots, marjoram, oregano, and sage to the slow cooker. Stir to combine.

Add browned shanks to the slow cooker.

Cover and cook on LOW for 10–12 hours until shanks are very tender and falling off the bone.

Garnish with fresh parsley. Serve over pasta or risotto.
